*I am having a wedding crash. It's like a sugar crash, only with my sister's wedding. I feel crabby and tearful, and I am extremely tired as the time difference has thoroughly jacked my internal sleep schedule. Really ready for some good sleep and vacation in Mexico.<br />

*Java is acting crazy...I think his dog sitter must have slipped him a tranquilizer or switched him with another dog. He has done nothing but sleep all day. It's amazing.<br />
<br />
*Graham and I did a photo shoot with our friend Rachel (www.rachelwalkerphotography.com) before we left for St. Louis and the pictures turned out SO GOOD. I will post some when I get the cd. It is hard not to brag about how adorbs Java is, particularly in these pics!<br />

*I am really over self-obsessed people. REALLY over them.<br />
<br />
*It seems I have forgotten how to differentiate between the caps lock key and the shift key. I have had to re-type a million things today-annoying!<br />

*When we get back from vacay, I am determined to get back to meal planning. And I have some new recipes to try that I will blog about. Excited for that.<br />

*The state of Washington says that the G6 is worth$7200. I paid $6k for it TWO YEARS AGO and if we sell for anything less than $7200, we get fined on the difference. We have had it listed for $5400 for 2 weeks and still haven't sold it. Pray it sells soon!<br />

*I have an opportunity in the works...that is hush-hush right now, but it is something I am super excited for and excited to share it with you all...look for the big announcement in July...(and no, I am not pregnant!!!!)<br />

For the shower favors, I made and canned caramel sauce (for ice cream). We used two different recipes because the first recipe got very grainy as it cooled. The second recipe was much smoother and you can make it <a href="http://heavenlyhomemakers.com/homemade-caramel-sauce-no-corn-syrup" target="_blank">here.</a> It is from my favorite website for Real/Whole foods....Heavenly Homemakers. Definitely one of the best parts of my trip was all the time I got to spend with these two and of course their mom (and my bff)! And their dad. (Don't want Greg to feel left out). Is there anything better than holding a 4-week old baby girl? I think not!<br />

I realize that many people fly once or twice a year, or even less in this stellar economy...so for those of you who have forgotten the rules of flying or just need a general brush up in how to not be a moron, here are a few tips.<br /><br />1) Follow the airline rules. Yeah, I know they suck. But when they say you get one personal item and a small carry-on, that means TWO items. Not three. Certainly not four. Let's use the guy directly in front of me in the security line as an example. He had a wheelie suitcase, a garment bag, and a briefcase. How many items is that? Correct, that is three. How many hands did he have? Two. This dude was like watching a train wreck, but I'll get to that in a minute. He got yelled at by the TSA and had to shove his garment bag into his suitcase because he refused to check it. I bet that shirt is going to come out on the other side looking less than stellar. All because the dude didn't want to spend an additional $20 and 10 minutes to check his bag. Ass.<br /><br />2) Move. As in, your butt. At any given point, more than 100 people are trying to get through security, so this is not the time to monkey around. Again, I'll use the guy from above as an example. (This guy was really helpful in my blog inspiration today!) First, he had all of the aforementioned "items", plus he took FOUR plastic bins. I had two, and would have had one but the surprisingly friendly TSA guy asked me to put the iPad in its own case. Fair enough. So this dude takes his four bins, puts them on the table and proceeds to NOT MOVE. I mean, he is emptying his pockets, which contained an iPhone, earbuds, wallet, keys, chapstick, and no less than $6 in CHANGE. Best part - he didn't put all of that change in a small bowl, he just dumped it in the big bin. The TSA finally hollers at him to move it already, and his first bin FINALLY goes through only to immediately be rejected because it contains (yup) liquids, gels, and foams in the form of toiletries. Those get tossed after he spends awhile digging them out. That suitcase gets sent through, then his briefcase goes through and gets sent back...and a bottle of water gets pulled out and tossed. At this point, the TSA lady loses it and starts yelling at him. She was unnecessarily harsh to the guy, but he was beyond ridiculous. Did he just wake up this morning, empty some drawers into his bags and say, "I think I am going to get on a plane today"? Be considerate of others and know that if you move quickly, you are helping others move quickly and it is a much less painful experience for all involved.<br /><br />3) You are not special. Nope. No one cares what you do or who you are in real life. Right now, if you are in row 6 and they are only boarding rows 15-25 - sit down. Don't start a line 30 minutes before actual boarding and create a massive bottleneck. Annoying. <br />
P.S. I have caught two flights where I was literally the last person to board - they were shutting the door behind me, and guess what? I found an article about how to cook a chicken in the crockpot...and then how to make your own homemade stock from said chicken. Easy peasy-and the chicken was super moist and the broth about a hundred times better than store bought! Here is how I did it:<br />
<br />
1. Buy a whole chicken (preferably free-range and organic). Put it in the crockpot for 7 hours on low. Don't add any water, but you can add s&p, paprika, or whatever other spices you like. I just did it up plain as I wanted the freedom to use the chicken however I deemed necessary for future meals.<br />
<br />
2. After the 7 hour mark, pull the chicken out (carefully as the meat all wants to fall off the bone), let cool enough to handle. There should be about 1-2 inches of chicken juices left in the crockpot. As you debone the chicken, throw the skin and the bones back into the crockpot. (I cut or broke the smaller bones to get out as much of the good marrow into the broth as possible). Add 5 cups of water. Throw in a carrot, some celery, some onions...whatever you have laying around. Set the crockpot on low overnight (I did ten hours).<br />
<br />
3. Wake up to a glorious smelling house. YUMMY! Strain all the veggies/bones/skins out and put the broth into your (freezer safe) containers. I used mason jars and got FIVE pints out of this batch! Let them cool completely, skim and discard fat off top-put the lids on and pop them in the freezer. Here is what my finished product looked like:<br />

</tbody></table>I used my first jar of chicken broth last night and it was SO GOOD-I really noticed a difference in flavor!<br />
So, with the crockpot chicken, on the first day I made my mom's chicken pot pie...one of our faves! I froze the rest of the shredded chicken (about 3 cups). Last night I pulled out about 1 1/2 cups to make delicious Chicken and White Bean enchiladas...oh they were so good, and I found the recipe on skinnytaste.com but you can link up to it <a href="http://www.skinnytaste.com/2010/06/chicken-and-white-bean-enchiladas-with.html">here</a>. <br />

Can you guess why? Corned beef, of course! I l-o-v-e corned beef. Def one of my top 5 all time favorite foods. I followed this recipe verbatim. And guess what happened? A large portion of the cake ended up on the 'floor' of the oven and actually burst into flames. PANIC ATTACK ensued. (a moment of silence for all of the deliciousness that was diminished to ashes...). Next time (and there wil be a next time!), I will bake in a regular loaf pan. It would probably even work as muffins, but the baking time would have to be adjusted. <br />

I love to curl up to read a book with him tucked into my side! He is SO PRESH. And he is a really, REALLY good dog. I don't want to say it too loudly...but...he is pretty much potty-trained, and has been for about 10 days now (he has been home with us for 3 weeks). He knows the routine, he sleeps through the night, he doesn't destroy the house or tear stuff up...so far, the biggest issue we have with him is his nipping when we are playing. He has his first (of 6) obedience classes starting next week, so we are hoping to learn how to get him to stop with that. Otherwise, we are pretty darn happy with our little addition!<br />

We are very passionate about the 90/10 rule (eat REAL food 90% of the time, and for the other 10%-leave it open to eating in restaurants, people's homes, etc.), as well as a balanced diet high in protein. We eat a lot of grass-fed beef, organic/free-range chicken/eggs, wild fish (never farmed...I just threw up in my mouth a little thinking about salmon force-fed corn and soy...barf!), whole grains, organic fruit (in moderation), loads of organic veggies, raw dairy when we can get it-organic full fat when we can't. I love to bake but have cut back on that tremendously-and when I do, it is with coconut flour, coconut oil, and the good ingredients I listed above (use sucanat, maple syrup (from Gpa V's farm!) or raw honey for sweetener. Salted Caramel Pretzel bark. I made this for a party I hosted a few weeks ago, and to say it was a hit, well...that would be an understatement! The recipe is not correct though...the butter/sugar mixture needs to be boiled for 7 minutes, not 3, in order for it to properly harden when set. Amateur. As of today, I have made 31 recipes off of Pinterest. 31! The 'unhealthy' stuff I have made for parties or to take to church, or delivered to new moms in the area, and the healthy stuff for me and G. In Seattle? Whaaaatttt?Mom says that lots of people have been asking how we survived the snow/ice storm that attacked the Pacific Northwest last week. We did fine, and were lucky to not lose electricity, unlike some areas of the state where people have been without power for 6 days! Graham worked from home 3.5 out of 5 days last week, and the only time I left the house from Sunday morning until Friday evening was on foot. The roads weren't horrible (we have certainly experienced worse!), however neither one of us wanted to deal with Seattle-ites who aren't used to driving in this stuff. We got about 3 inches on Sun-Mon, most of which melted Tues, then another 3-4 inches on Wed, and then about 1/2-3/4 in of ice on Thursday. Of course the ice was the worst, and the scariest. People were freaking out, but you know what freaked out MORE? Trees. There were trees snapping and falling over and crashing into houses and blocking roads ALL OVER THE PLACE. -expanding our family...by getting a puppy! If you remember back, I posted about whether or not to get a dog, and we have decided to go for it! We finally made contact with a Boston Terrier breeder south of Portland, OR and our little boy Boston Terrier was born the week of Christmas. We are supposed to get him at the end of February, however the owner has been incommunicado...looks like I am going to have to break down and call her, as much as I would rather just use email to work out all the deets!<br />

-Continuing to go green/organic/crunchy...whatever you want to call it. In 2011, we switched to non-toxic and/or homemade household cleaners, homemade laundry detergent and dishwasher detergent, and non-toxic, crap-free body lotions/cleansers/shampoos/etc. In 2012, we are already going shampoo-free (read more about that <a href="http://simplemom.net/how-to-clean-your-hair-without-shampoo/%20">here</a>), the oil cleansing method (I know you want to read <a href="http://www.theoilcleansingmethod.com/">this</a> as well), making our own soap (look for a future post about this-my ingredients are en route and I am hoping to make my first batch this weekend), reducing and reusing, using only stainless steel, ceramic, and glass in the kitchen (teflon=<a href="http://www.theherbprof.com/InfoTeflonPoisoning.htm">POISON</a>). We have also joined an organic produce co-op...LOVE this already. For a small price, we get a variety box of organic produce that I pick up at a neighbor's house. It is great because it forces us to try new things-last week I made collard greens for the first time and this week we will be getting kale. I have made smoothies and salads with kale before, but want to try a new recipe this time around.<br />
<br />
-Read more books. I read a lot already, but right now I have about 15 books stacked in the guest room. Gotta get to it!<br />
<br />
-Give more to our church. Build our church family. Join the church! Build our personal relationship with Christ. Continue our current volunteering efforts. Spend time every day reading the bible. Pray with my husband every night. Talk to others about Jesus.<br />
<br />
-Take a real vacation. <br />

-And lastly-be more organized, live more clutter-free, so life can be focused on relationships-relationship with God, with each other, and with our loved ones.<br />

Definitely finding a new church in Seattle. Both of us were NOT looking forward to the process, but feel incredibly blessed to have quickly found a church that is a great fit for us, where we have found an amazing group of friends to surround ourselves with.<br />

On Tuesday morning, I was leaving for work around 7:40a. I got in my car and backed out of my spot, directly into a BMW SUV bumper. OUCH. I was parked in a spot that was perpendicular to the BMW, and he was hanging out of the spot by about 3 feet. That's what happens when you don't look in your side mirrors but instead focus on the Ipod. Booo.<br />

</tbody></table>So I get out, get mad, calm down, take some pictures and get back in my car to write a note to the Beemer driver with my phone number to call if he wants to exchange insurance info. Jump in the car, maneuver out of the spot (very tight), call the hubs, text the boss and spend the morning worrying how much this is going to cost us. The thought "His bumper is worth more than my whole car" definitely ran through my head a time or two.<br />
<br />
Around lunchtime, the guy calls me and immediately said, "I can't believe you left a note." I was kinda flabbergasted as to what to say...so I said "It was the right thing to do, and I didn't want to get busted for a hit and run." The guy then proceeded to tell me why he parks the way he does (because the pole blocks him from getting out of his car and he has to crawl out the passenger side...understandable). He was very nice, but I was still waiting for him to drop the hammer. Instead he said, "Are you a Christian?" I replied, "Yes, I am sir." He said, "Well, we will consider this manner taken care of. God bless you," and he hung up the phone. WOW. I was so blown away. My heart felt so full and I immediately called Graham, and we both had tingles. Such an amazing example of how God provides for us in ALL areas and how He is always with us. It has been awesome sharing this story with our friends here, our family back home, and I hope you enjoy it as well. Graham's mom was in town and we wanted to do some 'touristy' type things. Our first stop on Saturday was the cruise...and we had perfect weather for it! It was sunny, mid to upper 70s and the water was bright blue. We saw the shipyards, and got a grand tour of the Seattle skyline-learning lots of history and fun facts along the way. G and I both agreed, this was probably the coolest thing we have done in Seattle. Below are some pictures taken from the cruise ship.<br />

</tbody></table>After the cruise, we headed to Pike's Place Market-always a good time, although crowded! We got a really good deal on some beautiful flowers...we paid $5 each for two huge bouquets. We also picked up salmon, scallops, veggies, amazing yellow nectarines, and monkfish to cook the next 2 days. We ate lunch at Pike Place Chowder (yes, again) and also had "World's Best" macaroni and cheese from Beecher's. G said it was good, but he has had better...although when I asked him to name where he had better, he came up with nothing. Personally, I found it to be the WORLD'S BEST! We had a great time seeing some sites and introducing her to our new friends, taking her to church, cooking fresh seafood, etc. MV arrived on Thursday night and Friday G had to work, so I took MV to the Museum of Glass in Tacoma. WAY COOL. MV is a glass bead artist, so I knew this would be fun for her. We saw a live demonstration of glass art making in the 'Hot Shop' as well as galleries full of various glass art pieces. The highlight was definitely the Chihuly bridge. Difficult to explain, hopefully the pictures will paint a picture in your mind. Oh yeah-I scored 2 for the price of 1 museum tickets off Groupon...jackpot!<br />

Tonight, I tried an awesome recipe that G loves, called Taco Chicken....and it was DELICIOUS! We made enough to have for tomorrow night as well, and G told me this was possibly the best meal I ever made...woot woot! Below is the super simple recipe...from our home to yours!<br />

Taco Chicken<br />
4 eggs<br />
bottled salsa or taco sauce<br />
1/4 tsp salt<br />
2 cups plain dry bread crumbs<br />
2 tsp chili powder<br />
2 tsp ground cumin<br />
1 1/2 tsp garlic salt (I used garlic powder)<br />
1/2 tsp oregano<br />
1 chicken breast per person (I made 5 this time)<br />
1/4 cup butter<br />
shredded lettuce<br />
sour cream<br />
diced tomatoes<br />
sliced avocado<br />
sliced green onions<br />
1 lime-wedged<br />
(we also used black olives) <br />

Directions:<br />
-While preparing chicken: Place butter in 9x13" pan in 375 degree oven. Remove pan when the butter has melted.<br />
-Beat together eggs, 4-5 Tablespoons of salsa/taco sauce, and salt in one bowl.<br />
-In another bowl, mix bread crumbs, chili powder, cumin, garlic salt, and oregano.<br />
-Rinse each chicken breast in clear water, coat with egg batter, then dip in crumb mixture.<br />
-Place chicken in pan, turn once to coat with butter, and bake about 35 minutes. (do not cover pan).<br />
<br />
To Serve:<br />

A story about a mom who was kidnapped, raped multiple times, and held captive...told from her 5 year-old sons point of view....very riveting, I had a hard time putting it down and ended up reading it in a day!<br />

This was a captivating story set in Mississippi in the 1960s. This book came highly recommended by my mother-in-law, otherwise known as MV. We got this from the library and I am sad that is due back next week...it is definitely a good book to have on hand! This book of full of info on the toxins that are present in every day products (saran wrap, deodorant, body wash, household cleaners) and what you can purchase to be greener for your body and the environment, as well as how to make your own cleaners from baking soda, vinegar, essential oils, etc. I am 3/4 of the way through this book and will likely write a post when I am finished about the changes that Graham and I are making in our lives to GO GREEN! I think this book may find its way under a Christmas tree or two come December!<br />

Finally, a silly, easy read book that I am going to finish today. I used to follow this guys blog some and it always cracked me up. Again, not a serious book...but seriously funny!<br />

-Visits and travel! Graham's mom (Vicky) is coming to visit next Thursday for 5 days! Super excited to have our first house guest, and do some more exploring! We are going to Snoqualmie Falls, Museum of Glass, Pike's Place, and who knows what else! Oct 6-10...I am heading to STL/BG to celebrate the Grote/Jardosh wedding, see my bff and goddaughter, and visit with the fam-and apparently work a catering job for my mom...gag. Nov 3-6-Sis and Mauri come to visit! We are going to hit up the Space Needle, EMP, and go on a Puget Sound cruise. Really excited to see both of them. We will be home for Christmas Dec 23-Jan 1...still working out the details of where we will be when-hard to fit so many family/friend visits in a short amount of time. Once we have it all worked out, I will post it here-that way if you are going to be BG/STL the same time we are, maybe we can meet up!<br />

-I got a new job! I start Sept 14, as a nanny for a family from our church-they have a newborn and a super smart 5-year-old that will be in Kindergarten. Possibly might be doing a nanny share with another family in our church who has an infant the same age. Really love the family and we are on the same wavelength regarding morals, expectations, and child rearing. Graham's work is going well-he is working on three projects now and it is finally keeping him busy! He is enjoying it more and more.<br />
<br />
-We really love our church and are getting more and more involved. The Community Group we originally joined was getting too big, so we went to a smaller group in the area, and are loving it! The leaders are a couple we have made good friends with, Nick and Rachel, and we will be helping with outreach as the group continues to grow. It has been a huge blessing to find this church and the Community Group for Christian fellowship!<br />
<br />
-Tonight, Graham and I have volunteer orientation at the Jubilee Center. Our church is one of the sponsors at this center for low income, under privileged families in the area. I have signed up to work their before school program on Thursday mornings and they have recruited Graham to teach computer classes to parents one night a week. We are both looking forward to the opportunity to serve God and minister to the community.<br />
<br />
-We applied for a rescue Boston Terrier through an agency in Seattle. Unfortunately, they don't get many rescue puppies, so we now have to decide if we want an older dog or if we want to spend the money and buy a puppy from a breeder (anywhere from $400-700!)...we are keeping our eyes peeled and running some searches online every other day in case something comes up! Friends in our Community group have a BT and they call it the Boston Terrorist...which scares me a bit :)<br />

-Weather has been BEAUTIFUL here...although it is overcast and chilly today. Hope everyone is well!<br />
